Organoleptic profile

Green fruity notes of medium intensity with hints of almond, artichoke, and green leaf. On the palate, medium-intensity bitterness and spiciness are perfectly balanced.

Suggested pairings with food

A medium fruity oil that complements the flavor of the food it is paired with. Ideal with:  pumpkin velouté (raw), rice and peas (raw), artichokes, asparagus, zucchini, and cooked sweet-leaning vegetables (to counterbalance sweetness, raw), frisella with stracciatella cheese (raw), marinated salmon, pasta with turnip greens (raw), basil pesto, plum cake.
